Chili
Everyone has their preferred Recipes. This one is Uncle Johns favorite.
1 - 2 lbs of Burger or Cubed Beef Stew or Turkey or Chicken or Venison
8 - 10 cups Beef Stock Homemade or Store bought (cans)
1 - 15oz can Each of Black Beans, Northern Beans,Kidney Beans,Chili Beans, Pinto Beans all Store Brand purchased.
Note: Rinse all Beans in Cold water before putting into pot.
3 Tblsp Butter/Oleo/Olive oil/Veg oil
2 Tblsp Flour
1 - 15oz can Diced Tomatoes drained
1 Stalk Celery diced
1 Small Onion diced
1 Garlic Clove or big pinch of Garlic powder or granulated
1/2 Small Turnip diced (optional)
1 Small can drained green chilies (located in Mexican food isle)
8oz Baby Bella mushrooms chopped or the ones to your liking (optional)
2 - 3 Packages McCormick chili mild mix or one of your favorites.(heat is optional)
1/2 Tsp Chipolata Chili powder or more
1 Cup of left over coffee from this morning
Cook your protein and drain off. Add your butter and flour and cook. Add vegetables and cook. add remainder of ingredients. Cook slowly and season with salt and pepper to your liking. To thicken puree a can of like beans or puree a carrot or use cornstarch. Do not use AGAR AGAR to thicken. It's bad for you.
DON'T FORGET TO WASH ALL CANNED BEANS IN COLD WATER BEFORE USING, YOU'LL THANK ME LATER.
Freeze small amounts of remainder for meals for the week or for the month.
My Coleslaw
1/8 cup Vegetable Oil
1/4 cup Apple Cider Vinegar
1/2 cup Sugar
1 tsp salt
1/2 cup Miracle Whip
1 head of Cabbage shredded or purchase bag of pre-made slaw(kroger)
1-2 Carrots shredded(see above)
1 tsp celery seeds
Mix the first 5 Ingredients inc seeds together, pour over slaw and refrigerate for 15 min.
